The Spinach Mushroom Egg Omelette is our go-to breakfast Omelette recipe. Super nutritious, extremely filling and perfectly balanced. Although tagged as a Breakfast recipe, you can absolutely enjoy this Omelette for Breakfast, Brunch, Lunch or Dinner. If you are looking for #musclebuild or #fatloss, then this recipe must be in top of your meal plan.

 2 qts Whole eggs
 2 qts Egg Whites
 100 g Spinach
 100 g Mushroom
 2 qts Chopped Green Chillies
 2 g Salt
 ¼ tsp Pepper Powder
 ¼ tsp Coconut or Olive oil

Wash and clean the mushrooms and spinach

Chop the spinach and dice the mushrooms

Heat a pan in medium heat. Add ¼ teaspoon oil to the pan and allow oil to heat up

Add the sliced mushrooms and sauté for 5 minutes

Add spinach and sauté it along with mushrooms for another 5 minutes. (Adjust time as per your taste; Generally all vegetables will be cooked and soft in 5 minutes)

Add green chillies and pepper to this mix and stir for another minute

Add salt and stir it well

Crack all eggs into a bowl and separate 3 egg yolks from the bowl

Mix all cooked vegetables (spinach & mushrooms) and eggs in a bowl

Return the same pan to medium heat and add 1/4 teaspoon of oil and let it heat for a few seconds

Pour half of the omelette mixture into the hot pan and cook it for 2 minutes on one side and then flip it over. Wait for a further a minute or until it's fully cooked

Serve as hot along with toast or on its own with some salad tomato and spinach leaves
